Pumpkin Spice Alfredo Pasta

This INCREDIBLE pasta dish was inspired using the Spiced Pumpkin Butter recipe. The deep flavor of Pumpkin Spice coffee is the infused ingredient used to make this butter.
To make this dish, we simply added it to this delicious silky Alfredo sauce and tossed it with pasta. The result is a warm, comforting dish that perfectly captures the essence of fall. Enjoy every bite, and let the taste of autumn linger long after the last leaf has fallen.

Ingredients
- 8ozs noodles or your favorite pasta
- 1 cup cream
- 2 TBSP butter
- 1/2 cup pumpkin butter (see recipe below)
- 1/4 cup grated cheese (I use Pecorino Romano)
- salt and pepper, to taste
- 1/4 cup fresh parsley leaves, chopped
- 2 TBSP scallions (green onions) for topping
Instructions
- Heat water in a large pot to prepare the pasta. Cook the pasta and drain the water. (Do not overcook the pasta.) The pasta will continue to cook when you add it to the hot alfredo sauce.
- Add the cream, butter, pumpkin butter, and cheese to a medium pot. Season with salt and pepper to your liking. Stir and simmer on the stovetop until heated.
- Stir in the parsley. Add the cooked pasta to a serving bowl. Pour the alfredo sauce over top of the pasta. Toss to coat the pasta with the sauce. Sprinkle the pasta with fresh scallions. Serve with additional grated cheese, if desired.
Spiced Pumpkin Butter
- 1/2 cup pumpkin spice coffee, brewed strong
- 1 can pumpkin
- 6 TBSP pure maple syrup
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1 tsp lemon juice
- 1/8 tsp salt
Instructions
- Brew (on the strong side) a pot of Door County Pumpkin Spice Coffee. Reserve 1/2 cup.
- Add the coffee and remaining ingredients to a medium size non-stick pot. Stir. Heat on med/high until it starts to boil. Reduce the temperature and simmer until the mixture starts to thicken, approx. 30 mins. Stir every few minutes. The longer you simmer, the thicker it will become.
Pumpkin Pie Spice Ingredients
- 6 TBSP ground cinnamon
- 4 tsp ground ginger
- 4 tsp ground nutmeg
- 3 tsp allspice
- 3 tsp ground cloves
Instructions
- Mix all the ingredients together in a bowl.
- Store in a sealed jar or container.
