Apple Coffee Cake

"I have loved apple cakes since I was a little girl when my grandma made them. The aroma of the apples and spices brings back wonderful memories! The coffee in the cake and sauce gives the recipe a little "grown-up" flair to the dessert. If you eat this while sipping a cup of fresh brewed Door County coffee, you'll have a real treat!"

Ingredients

Featured ingredient: Pumpkin Spice Coffee 8 oz. Bag Ground

Cake:

    • 1/4 cup butter
    • 1/4 cup Door County Coffee Pumpkin Spice coffee (brewed and cooled)
    • 1/2 cup sugar
    • 1 egg
    • 1 cup flour
    • 1/2 tsp baking soda
    • 1/2 tsp ground nutmeg
    • 1/2 tsp. ground cinnamon
    • 2 cups peeled and finely chopped apples
    • 1/2 cup chopped walnuts

Sauce:

    • 1/2 cup packed brown sugar
    • 2 heaping Tbsps cornstarch
    • 1/2 cup light corn syrup
    • 1/4 cup Door County Coffee Pumpkin Spice coffee (brewed and cooled)
    • 1/4 cup butter
    • 1/4 tsp salt

Instructions

Cake:

  1. In mixing bowl cream butter and sugar, beat in egg, combine flour, baking soda, nutmeg and cinnamon, add to creamed mixture and mix well.
  2. Stir in apples and walnuts.
  3. Turn into a greased 8 inch square baking pan.
  4. Bake at 350 degrees for 30 minutes.

Sauce:

  1. Blend brown sugar and cornstarch in a saucepan.
  2. Add remaining ingredients.
  3. Cook over medium high heat and stir until thickened, about 3 minutes.
  4. Serve cake warm or cold with warm caramel sauce.
