Brandy Alexander Celebration Cake

Brandy Alexander coffee offers a luxurious depth that transforms classic coffee moments into something truly extraordinary.

This chocolate cake was designed to celebrate that richness. Moist chocolate layers infused with Brandy Alexander coffee pairs beautifully with a bright cherry cream filling, while a coffee-infused chocolate glaze adds even more luscious flavor.
Finished with clouds of whipped cream and a cognac side, this dessert turns every slice into a celebration of flavor, coffee, and timeless tradition.

Cake Ingredients & Directions:

  • 1 pot of Brewed Brandy Alexander Coffee
  • 1 box of your favorite chocolate cake
  1. Make the cake according to the box instructions. (Note: Substitute 1 cup of water for 1 cup of brewed Brandy Alexander Coffee, room temperature)
  2. Divide the cake batter into two square baking pans (8x8 or 9x9)
  3. When the cake is baked and has cooled completely, place one layer on a serving plate. Frost the top of the cake with the cherry cream. Place the second piece of cake layer on top of the cherry cream, creating a double-layer cake

Cherry Cream Ingredients & Directions:

  • 2 cups heavy cream
  • 1/2 cup cream cheese, room temperature
  • 6 TBSP powdered sugar
  • 1 tsp brewed coffee (Brandy Alexander)
  • 1/2 cup pitted cherries, pat dry (I use jarred Bing cherries)
  1. Place the heavy cream in a mixing bowl. Whip until it starts to thicken. (approx. 5 mins)
  2. Add the cream cheese and whip to incorporate.
  3. Add the sugar and coffee. Whip again for another 1-2 minutes to make the cream smooth and fluffy
  4. Divide the cream in half. Fold in the cherries with a spoon or rubber spatula and put it into the bowl with half of the cream. Place the other half of the cream into a piping bag. Refrigerate until ready to use. (Note: Gently pat dry the cherries with a clean paper towel. Wet cherries will make the cream watery)

Chocolate Glaze Ingredients & Directions:

  • 2 cups dark melting chocolate
  • 1 cup hot brewed Brandy Alexander coffee
  1. Heat the chocolate in the microwave or double boiler. Stir to make sure the chocolate is completely melted. Whisk in the coffee a little at a time to incorporate. Keep adding coffee until the glaze is smooth and pourable.
  2. Immediately pour the glaze over the top of the cake, allowing the glaze to drizzle over the edges
  3. Chill the cake in the refrigerator. When ready to serve, pipe extra whipped cream on top of each piece. Sprinkle cocoa and nutmeg over the top. Add a shot of your favorite brandy to serve with the cake. (I filled little bottles with cognac)

Note: Place small pieces of wax or parchment paper along the edges to keep the serving dish clean from the glaze
