Follow these steps to create this decadent ice cream that will transport your taste buds on a Journey, and leave them in a frenzy. Every spoonful will be a delightful ending to any meal.

Ingredients for Ice Cream

  • 2 cups cherries, pitted (fresh or frozen)
  • 1/4 -1/2 cup Old Fashioned coffee
  • 3 cups heavy cream
  • 1 cup milk, whole
  • 3/4 cup sugar, granulated
  • 2 tsp vanilla bean paste
  • 5 egg yolks, beaten

Directions for Ice Cream

  1. Cook the Cherries: In a medium-sized pan, combine cherries and coffee. Cook over medium-high heat until the cherries are soft and most of the liquid has evaporated, about 10-15 minutes. Transfer the cherries to a freezer-safe glass dish (approximately 9 x 12 inches), spreading them evenly. Set aside.
  2. Prepare the Cream Mixture: Using the same pan, mix the heavy cream, milk, sugar, and vanilla bean paste. Simmer on low heat, stirring occasionally, until the sugar is completely dissolved.
  3. Temper the Egg Yolks: In a separate bowl, beat the egg yolks. Gradually add a ladleful of the hot cream mixture to the yolks, stirring quickly to prevent curdling. Continue to slowly incorporate the cream mixture until combined.
  4. Cook the Custard: Return the egg and cream mixture to the pan. Cook over low heat, stirring constantly, until the mixture thickens slightly, about 10 minutes. Pour the custard over the cherries in the glass dish.
  5. Add Chocolate Swirls: Drizzle melted chocolate over the custard. Use a knife to gently swirl the chocolate through the mixture, creating a marbled effect.
  6. Freeze: Cover the surface of the ice cream with plastic wrap, pressing lightly to prevent ice crystals from forming. Cover the dish with a second layer of plastic wrap. Freeze overnight until firm.

Ingredients for Coffee Fudge

  • 1 cup dark chocolate morsels
  • 1/2 cup Old Fashioned Coffee, freshly brewed

Directions for Coffee Fudge

  1. Heat the morsels in a medium-size microwave-safe bowl for 1 minute (high powder). Remove from the microwave and stir until completely melted. Heat for an additional few minutes if needed.
  2. Pour the hot coffee into the melted chocolate a little at a time, stirring simultaneously. The chocolate should be smooth and pourable. Add additional coffee if needed. Keep warm until ready to use. Stir again when ready to use.

(Note: I keep the chocolate in the warm microwave with the door closed to maintain its temperature)
