Chocolate Cherry Coffee Jam

LET'S BE CORDIAL!
Chocolate-covered cherries in a jar. Who would think?
Who doesn't love the taste of sweet chocolate-covered cherries? The smooth, chocolatey, decadent candy is bursting with goodness. We cooked the cherries in some "Old Fashioned" coffee and simmered it until it thickened. It is a unique blend where deep, rich flavors of cherries meet the robust essence of coffee, creating a luxurious chocolate-coffee-cherry jam. It opens the door to a world of many culinary possibilities.
Enjoy this jam with your favorite foods. Spread it on toast or croissant, dip it in fruit and veggies, fill it in pastries, or even top it on a baked brie and serve it as an appetizer. If that's not enough to suggest try a dollop on pancakes or waffles, use it as a cake filling, or air it with cheese and crackers. You can lift your yogurt, top your ice cream, or add to smoothies.
You can swirl some into your brownie batter or use it in your cookie recipes. How about re-inventing the P, B, and J sandwiches? The options are endless!
This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Café.
Ingredients
Featured ingredient: 10oz Old Fashiond Coffee
- 12ozs frozen cherries, pitted
- 4 cups water
- 1 cup Old Fashioned Coffee, brewed
- 1/4 tsp salt
- 2 TBSP prosecco, optional
- 1/2 - 3/4 cup granulated sugar
- 1/4 dark chocolate morsels
Instructions
- Add the cherries, water, brewed coffee, salt, and prosecco to a medium-size pot. Cook on med-high heat, stirring. Bring to a boil, then reduce the temperature and simmer for 20 mins to soften the cherries.
- Puree the cherries with a hand blender. (If you do not have a hand blender, you can use a stand blender, but return it to the pot.)
- Stir in the sugar and stir until the sugar is dissolved. (I used 1/2 cup of sugar, but you can add more if you are a sweetie). Simmer until the jam is thickened, approx. 30 mins.
- Add in the chocolate morsels. Stir until the chocolate is completely dissolved.
Store in a sterilized jar or container. Refrigerate.
