Door County Cheery Cherry/Peach Bread Pudding

"Door County Cheery Cherry/Peach Bread Pudding uses Wisconsin Proud ingredients, such as butter, eggs, Door County cherries, and cream. Every year during the Door County Scottie Dog Rally, my daughter and I eat at a well known restaurant that features a breakfast item with a cherry/peach combination. Bread pudding is a family favorite and I had just enjoyed a cup of the new flavor Frosted Cinnamon Buns coffee. An inspiration struck, and we can now enjoy a taste of Door County all year round."


This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Café.

 

Ingredients

Featured ingredient: Frosted Cinnamon Buns Coffee 10 oz. Bag Ground

  • 2 cups Door County Coffee Frosted Cinnamon Buns Coffee, strong brewed
  • 1/4 cup butter
  • 2 eggs slightly beaten
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 6 cups crustless bakery type soft bread cubes
  • 1/2 cup dried Door County cherries
  • 1/2 cup coarsely chopped peaches
  • whipped cream- optional
  • 1/2 cup coconut
  • 1/2 cup thinly sliced almonds

Instructions

  1. Heat oven to 350 F. degrees. In a medium size saucepan heat coffee and butter until butter is melted,add sugar stir until dissolved, add dried cherries.
  2. In a large bowl mix eggs, salt, bread cubes and peach chunks. Sir in coffee mixture. Pour into an ungreased casserole dish.
  3. Bake uncovered 40 to 45 mins or until knife inserted comes out clean.
  4. Serve warm with whipped cream and toasted coconut and almond slices.

*to make toasted almonds and coconut: use a small skillet over medium heat. Melt 2 Tbsp. butter, add coconut and almonds; watch carefully. It only takes 2-3 minutes to turn golden brown.
