Door County Coffee Cake

This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Café.
Ingredients
Featured ingredient: Lighthouse Blend Coffee 10 oz. Ground
Cake:

- 2 eggs- beaten
- 1 cup sugar
- 1 cup cake flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 cup brewed Door County Coffee Lighhouse Blend (made with scalded milk, not water)
- 1 Tbsp melted butter
- 1 tsp vanilla
Topping:
-
- 6 Tbsps melted butter
- 1/2 cup packed brown sugar
- 1/4 cup cream
- 1/2 tsp vanilla
- 1 cup moist coconut
Instructions
Cake:
- Greased 8" pan.
- Beat eggs, add sugar, beat well.
- Add flour sifted with salt and baking powder, alternating with coffee and butter.
- Baked at 350° for 45 min.
Topping:
Combine, broil until brown and bubbly, spread over cake.
