Espresso Martini Cupcakes

ESPRESSO YOURSELF!

Slip your way into this luscious espresso martini dessert. A chocolatey treat dressed to impress any guest.

This recipe starts with brewing a pot of Door County's Espresso Martini Coffee. The deep, dark flavors of this intense blend are incorporated into the simple cake batter. The cake is then molded into a glass to represent a chocolate espresso martini.

We didn't stop there, though. The frosting is also tinted with a splash of the same coffee, making this frosting silky smooth to the taste. The pairing of this cake and frosting makes the perfect dessert for everyone.

If you choose, add surprise layers of chocolate pudding, candies, or your favorite ingredients. Go ahead and be creative.

This recipe can be made using your favorite boxed mix; just replace the water for brewed coffee. A cupcake recipe is provided below if you choose not to use a boxed mix.

Ingredients for Cupcakes

  • 2 cups flour
  • 3/4 cup unsweetened dark cocoa powder
  • 1 TBSP psyllium husk powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 cups sugar, granulated
  • 1 cup buttermilk
  • 1/2 cup olive oil
  • 2 eggs, room temperature
  • 3/4 cup Espresso Martini Coffee, freshly brewed strong (cool)

Notes: This recipe can be made gluten-free (use flour that contains xanthan gum)

Directions for Cupcakes

  1. Preheat the oven to 350 degrees. Prepare 24-count cupcake tins.
  2. Add all of the dry ingredients to a bowl. Mix together wel
  3. Add the wet ingredients and mix until thoroughly combined. Divide the batter into your cupcake wells.
  4. Bake in a pre-heated 350-degree oven for approx. 16-18 mins. The time will vary depending on how much batter you decide to use for each cupcake. Cool the cupcakes before assembling
  5. Fill a small martini glass with a cupcake (without paper). Frost the cupcake with the frosting.

Note: I filled the glass with a cupcake and pressed the cake into the edges with my fingers. I added a second cupcake inside the glass and topped it with frosting.
To Add The Chocolate Rim: Dip the glass into melted chocolate, then into shaved chocolate.

Directions for Frosting

  • 5 cups confectioners sugar (adjust to desired thickness)
  • 1/4 cup cream cheese or mascarpone cheese, softened.
  • 1/4 cup heavy cream
  • 1/4 cup Espresso Martini Coffee
  • 2 - 4 TBSP melted chocolate or chocolate syrup (adjust to your desired color)
  • 2 TBSP vanilla extract
  • Pinch salt
  • Mix together with a hand blender

Garnishes: Chocolate shavings, Espresso beans.
