Irish Cream Bombe

"This is a spin on the classic French Bombe dessert. Who doesn't love ice cream, brownies, whipped cream, nuts, and coffee together?! The Irish Cream Coffee is incredible! It gave this dessert a dreamy, creamy flavor that will make you keep going back for more."

This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Cafe.



Featured ingredient: Irish Cream Coffee 10 oz. Bag Ground

  • 1/2 cup Door County Irish Cream Coffee, strong brewed (use 1/2 the water) and cooled, divided
  • 1 quart coffee flavored softened ice cream
  • 5 large eggs
  • 2 1/4 cups sugar
  • 1 cup vegetable shortening
  • 1/3 cup cocoa powder
  • 2 cups flour
  • 1 tsp salt
  • 2 cups whipping cream
  • 1 cup chocolate fudge topping
  • 2/3 cup crushed peanuts


1. Preheat the oven to 325°F
2. Beat eggs, sugar, shortening, cocoa, flour, salt, and 2 tablespoons brewed coffee in a large bowl. Spread into a greased cookie sheet.
3. Bake for 20 minutes and then let cool
4. Line plastic wrap in a large bowl with excess hanging over the sides. Cut the brownies to fit the inside of bowl by cutting a circle shape for the bottom of bowl. Cut retangles and triangles shapes for the sides of the bowl. Press together and brush with 2 tablespoons coffee.
5. Spread softened ice cream on top of brownie. And cover with plastic wrap with excess hanging over the sides.
6. Place a small bowl on top of the plastic wrap and press down and place in the freezer for 2 hours.
7. Whip the whipping cream until soft peak. Slowly whip in remaining coffee until reaching stiff peaks.
8. Remove bowl from freezer and remove the smaller bowl and top plastic wrap. Spread fudge topping over ice cream.
9. Fill with the coffee whipping cream and sprinkle with nuts. Place back into the freezer for 2-4 hours or until frozen.
10. Remove from bowl by flipping it upside down and pulling on the sides of the plastic wrap. Discard plastic wrap.
11. Dust with cocoa powder and serve immediately.
