Mocha Peanut Butter Cookie Sandwiches

Ingredients
- 36 chocolate sandwich cream cookies
- 2 cups dark melting chocolate
- 1/4 cup Mistletoe coffee, divided
Peanut Butter Filling:
- 1 cup peanut butter
- 2 TBSP Mistletoe Mocha coffee, brewed
- 1 tsp vanilla
- 2 tsp butter
- 3 TBSP agave sugar
- 1/2 cup powdered sugar
Instructions
- Mix all ingredients for the peanut butter filling in a food processor. Fill the mixture into a piping bag. You can also fill the cookies by spoonfuls.
- Carefully open each sandwich cookie. With a butter knife, remove the cream inside the sandwich cookie. Place the cream in a small bowl.
- Fill approx. 1 tsp of the peanut butter filling on top of one of the cookies. Place a cookie on top, pressing gently to create a sandwich. Do this with the remaining cookies.
- Melt the chocolate according to the directions on the package. Stir in 2 TBS coffee. Using a fork, dip the cookie into the chocolate and flip over to coat the entire cookie. Pick the cookie up with the fork and tap against the bowl to remove any excess chocolate from the cookie. Place on a piece of wax paper. Do this step for the remaining cookies. Let the cookies dry.
- Add 2 TBSP coffee to the bowl filled with the cream. Heat in the microwave for a few seconds or until cream is melted. Stir well. With a clean fork, drizzle the cream over top of the cookies. Decorate the cookies with your favorite sprinkles..
