Ingredients for Cherry Filling
- 1/2 cup sugar
- 1/4 cup cornstarch
- 6 cups cherries (fresh or frozen) pitted
- 1/4 cup Old Fashioned Coffee, brewed (add 1/2 cup if using fresh cherries)
- 2 TBSP lemon juice
- 1/2 tsp salt
- 1/2 tsp vanilla extract
Directions for Cherry Filling:
- Mix the sugar and corn start together in a small bowl. Add the sugar mixture to a med/large size pot.
- Heat the pot on medium/high heat. Stir in all remaining ingredient, except vanilla. Bring to a boil (avoid burning). Once the sauce thickens and cherries are cooked reduce temperature and taste. Note: Cherries vary in taste, so adjust them with more lemon juice and sugar if needed. Turn off the burner
- Stir in the vanilla. Cool.
Ingredients for Cherry Crisp Cake:
- 2 cups of the cherry filling
- 1 cup flour
- 1 cup oats
- 1 1/4 cup sugar
- 1/2 cup walnuts, chopped (divided)
- 1.5 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 egg
- 1/2 cup Old Fashioned Coffee, brewed
- 1 stick butter, melted
Directions for Cherry Crisp Cake:
- Preheat the oven to 350 degrees. Grease a 9 x 9-inch baking dish.
- Add the cherry filling to the bottom of the baking dish.
- Mix the flour, oats, sugar, 1/4 cup walnuts, baking powder, cinnamon, salt, and egg in a bowl. Mix until all combined and crumbly, Sprinkle the mixture over the top of the cherries. Pour the coffee over the top of the flour crumble
- Melt the butter. Pour the butter over the flour crumble. Sprinkle with the remaining walnuts
- Bake 35-40 mins or until done
