Peanut Butter Crunch Meatballs (with Peanut Butter Crunch Sauce)

Meatballs with coffee-infused sauce don't get any better.

These Asian-style meatballs will be the hit at your next party. The meatballs are delicious all alone. Now, toss them in this homemade Peanut Butter Crunch Sauce, then top with crushed peanuts, and they will be gone before you know it. Serve them as an appetizer, on top of a salad, or with rice or noodles. This is a great recipe to bring to any gathering.

MEATBALL INGREDIENTS

  • 1/4 cup raisins
  • 1/2 cup feta cheese
  • 1 egg
  • 1 TBSP ground ginger
  • 1 TBS Psoy sauce (tamari)
  • 2 cloves garlic, minced
  • 1 tsp dry cilantro or parsley
  • 2 tsp dry chives
  • 1/2 cup seasoned bread crumbs
  • 1 lb ground beef

SAUCE INGREDIENTS

  • 1 cup Peanut Butter Crunch Coffee, brewed
  • 1/4 cup soy sauce (tamari)
  • 1 clove garlic, minced
  • 1 TBSP ginger, minced
  • 1 Tsp dry chives
  • 1 tsp dry cilantro or parsley
  • 2 - 4 tsp honey
  • 1 tsp corn starch

Instructions for Meatballs

  1. Preheat the oven to 375 degrees
  2. Add all the ingredients (except the meat) to a medium-size bowl. Mix well to incorporate the egg. Add the beef and season with salt and pepper. Fold the meat into the stuffing mixture.
  3. Roll medium-sized meatballs and place them onto a large baking sheet (greased). Bake for approx. 20 mins. or until desired doneness.

Instructions for Sauce

  1. Add all ingredients (except the corn starch) into a medium-size skillet. Heat at a high temperature to bring it to a boil. Reduce to a simmer.
  2. Add the corn starch to a small bowl. Add a few teaspoons of the sauce to the corn starch and stir together, making a slurry. Add the slurry to the skillet, and stir.
  3. Add the hot meatballs to the skillet with the sauce. Fold the meatballs into the sauce to coat. Simmer for 3-5 mins. Serve the meatballs with rice or noodles
  4. Garnish: Crushed Peanuts and Chive
