Pumpkin Spice Butter

How have I been living without this delectable pumpkin butter all my life? The creamy, spreadable stuff you can slather on just about anything. It makes for a quick and easy breakfast or snack on the go. Smear it on toast or eat it with a spoonful.
If you do not have pumpkin pie spice, I am including a recipe to make your own. I am sure you have all the necessary ingredients in your spice rack.

Spiced Pumpkin Butter Ingredients
- 1/2 cup pumpkin spice coffee, brewed strong
- 1 can pumpkin
- 6 TBSP pure maple syrup
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1 tsp lemon juice
- 1/8 tsp salt
Instructions
- Brew (on the strong side) a pot of Door County Pumpkin Spice Coffee. Reserve 1/2 cup.
- Add the coffee and remaining ingredients to a medium-size non-stick pot. Stir. Heat on med/high until it starts to boil
- Reduce the temperature and simmer until the mixture starts to thicken, approx. 30 mins. Stir every few minutes. The longer you simmer it, the thicker it will become.
Note: Taste and adjust to the desired sweetness and spice
Pumpkin Pie Spice Ingredients
Mix all ingredients (except walnuts) in a bowl.
- 6 TBSP ground cinnamon
- 4 tsp ground ginger
- 4 tsp ground nutmeg
- 3 tsp allspice
- 3 tsp ground cloves
Instructions
- Mix all the ingredients together in a bowl.
- Store in a sealed jar or container.
