This is a Door County Coffee Fan recipe. It was not made in the kitchens of the Door County Coffee Café.

Ingredients

Featured ingredient: buz Vanilla Bean Coffee Concentrate

  • 1 1/2 cups oats
  • 1/2 cup flax/chia seeds (or other seeds or nuts)
  • 1/2 cup chocolate chips (milk or dark)
  • 1/4 cup peanut butter, creamy
  • 1/3 cup maple syrup
  • 1 cup golden raisins, cranberries or cherries
  • 2 TBSP Vanilla Bean Coffee Concentrate
  • 1/4 tsp himalayan sea salt

Instructions

  1. Add oats, seeds and chips to a bowl. Mix well.
  2. In a saucepan, add the peanut butter, maple syrup, raisins, vanilla bean coffee concentrate and salt. Heat on low until the peanut butter melts. Mix to incorporate all the ingredients.
  3. Scrape the mixture from the pan and add to the bowl with the oats. Fold all the ingredients together.
  4. Grease the bottom and sides of an 8 x 12 size baking dish. Add the mixture to the dish and spread evenly across the bottom. Press firmly and place in the refrigerator for approx. 20 mins. Slice into desired size. Store in a sealed storage container.

NOTE:

  1. I like to layer a piece of parchment paper on the bottom of the dish for easy removal.
  2. The mixture can also be rolled into bite size balls. Keep your hands moist with water to prevent the mixture from sticking to your hands.
