Corned Beef & Cabbage Soup
St. Patrick’s Day or not, this flavorful soup will warm you up any time of the year. Many of the ingredients can be found in Fall at the local farmers market!
- 2 lb. corned beef, cubed
- 1 head cabbage, shredded
- ¼ cup beef base
- ½ to 1 onion, chopped
- 2 large carrots, chopped to bite size pieces
- 8 each fresh Baby Red Potatoes, washed & cubed
- 4 qts.water
- Pepper to taste
Combine all ingredients in large soup kettle and cook until vegetables are tender.
